Vegetables are good for us + plants are power! The nutrients found in vegetables are vital for a healthy body and can even reduce our risk of chronic disease. This is probably not new news to most of us. However it can sometimes be difficult to get in those five recommended vegetables a day and all of the nutrients we need.

I am very conscious of what I put into my body, making sure I am nourishing it in order for it to stay healthy and energised. When it reaches dinner time and I feel like a need that extra bit of veg in my life I will make this soup!
