Cookies are definitely my favourite thing to bake (and to eat)! Ever since my sister and I started baking them at the age of ten I have always preferred the taste of home made cookies. Obviously a little older now but still holding on to that nostalgic memory. I thought I would share my more recent, more grown up and most definitely more healthier version of my homemade cookie.
They are delicious yet substantial, so they fill your tummy up, satisfy you and kill that sugar craving at the same time.
These ones are especially amazing as they are completely vegan friendly, YAY.
Very easy to throw together and only take 8 minutes to bake…
To make 15 cookies
You will need –
6oml of oat milk
160g organic all purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 ground cloves
1/4 teaspoon ground nutmeg
80ml melted coconut oil
50g brown sugar (billingtons is vegan)
60g apple sauce
2 tablespoons maple syrup
1 and a 1/2 teaspoon flaxseed meal
1 teaspoon vanilla extract
Preheat the oven to 175°C.
Line two baking trays with greaseproof paper.
Get a large bowl and mix together the flour, oats, cinnamon, baking powder, baking soda, ginger, salt, cloves and nutmeg.
Then in a medium bowl mix together the coconut oil, brown sugar, applesauce, maple syrup, flaxseed meal, vanilla extract and milk.
Now add all the ingredients in the medium bowl into the flour mixture and stir until combined.
When nicely mixed together spoon heaped tablespoons of dough on to the baking trays.
Then place the cookies in the oven for 8 minutes or until set and beginning to turn golden brown.
Take out of the oven when they are ready and allow to cool. Et Voila, you have your delicious, healthy and totally vegan friendly cookies. It really is that simple!
Right I know these don’t look that appetising but TRUST ME they are divine.
The oats combined with the spices give them the most amazing flavour.
If you wanted to make them look prettier you could drizzle some vegan chocolate on top, I have tried that as well and it is so yummy!
If you don’t eat them all in one go there are the perfect afternoon snack or evening sweet treat. Just keep them in the fridge in a air tight container.
Who would of thought non-dairy cookies could be so tasty!?
