The five a day Soup

Vegetables are good for us + plants are power! The nutrients found in vegetables are vital for a healthy body and can even reduce our risk of chronic disease. This is probably not new news to most of us. However it can sometimes be difficult to get in those five recommended vegetables a day and all of the nutrients we need.

I am very conscious of what I put into my body, making sure I am nourishing it in order for it to stay healthy and energised. When it reaches dinner time and I feel like a need that extra bit of veg in my life I will make this soup!

The amazing thing about this soup is that if vegetables are not your thing you do not need to worry, because you honestly can not taste them! The cumin and the paprika with the black beans and the chilli make this soup spicy, flavoursome and ridiculously tasty. You could even mix this recipe up and instead of the carrots and courgette you could make this with your favourite vegetables. Even adding any veg from your fridge that really needs to be eaten up. I promise you it will still taste delicious!

 

Serves 4

You will need 

For the soup:

1 onion

2 cloves of garlic

1/2 a chilli

1 Courgette

1 Pepper

3 Carrots

1 Tablespoon Cumin

1 Tablespoon Paprika

2 400g tins of Black Beans

1 tin of vegetable stock

Salt and pepper to season

Olive Oil

 

For the Guacamole and tortillas:

1 Lime

1 handful of Cherry Tomatoes

2 Avocados

A handful of Corriander

4 Tortilla wraps

Method 

Start by chopping up your onion, garlic, pepper, carrot, courgette and chilli.

It doesn’t have to be to neat as we will be blending it all together later.

Then simply place all the chopped items, except the courgette, in a medium pan on a low to medium heat. Add a glug of olive oil and leave to soften for around 10 minutes.

Whilst this is happening using your scissors cut your tortilla wraps into small triangles. (Trying to create tortilla chip like shapes can be a bit tricky but just aim for triangles and hope for the best). Then pre heat the oven at 180c degrees. Eventually placing the cut triangles on lined baking trays, lightly covering with olive oil and seasoning with salt. Place to the side until its time to put the chips into the oven.

Now go back to the cooker and add your courgette to the pan, cook for a further 5 minutes.

Then add the spices and the black beans. One tin of the black beans drained and rinsed and one tin juice and all. Finally adding your 1 tin of stock into the pan.

Bring to a boil and then turn down the heat and leave to simmer for 15 minutes. While the soup is simmering you can make your guacamole and tortilla chips.

To make the chips all you have to do is place the baking trays in the oven for 10 mins, checking the chips every now and again making sure to not let them burn. These are the best chips ever, so easy to make, a lot yummier than the ones you are buy in the store and 100% healthier!

To make the tastiest guacamole ever simply scoop the flesh of the avocados into a large bowl and mash them using a fork. Chop your tomatoes and coriander finely and add to the bowl.

Squeeze the juice of the lime into the bowl and season with salt and pepper.Then mix it well, until it is nice and combined.

It is that easy and it tastes SO GOOD.

After the 15 minutes is up take your pan off the heat. Take your hand blender (or if you don’t have one put the soup in your food processor) and blend the soup until it reaches a smooth consistency.

Now take your tortilla chips out of the oven. Pour your soup into a nice big bowl and serve alongside the homemade tortilla chips and guacamole.

This meal is also vegan, plant based, gluten and diary free. It is a great one to make if you are having veggie or vegan friends over for dinner, trust me they will love it!

p.s. If you have leftovers you can simply freeze the soup in a air tight container and it will be ready to go if you ever need a super quick, healthy week night dinner.
