The yummiest vegan chocolate brownies

Tagged: , , , , , , , , , ,

Sometimes in life you need a chocolate brownie. Here I am to deliver you the best vegan chocolate brownies you have ever had. They are deliciously gooey, deviously chocolatey and 100% dairy free, gluten free and wonderfully sweetened with natural ingredients.

The best thing about them is you can not tell they aren’t normal brownies. They are even better!

Trust me you are going to love these incredible treats.

They are super easy to make and only take around 30 minutes.

You will need:

115g Melted vegan butter (or coconut oil)

60ml Maple syrup

95g Coconut sugar (or organic cane sugar)

1 Teaspoon vanilla extract

2 Flax eggs (2 Tbsp flaxseed meal + 5 Tbsp water)

3/4 Tablespoon baking powder

1/4 Teaspoon sea salt

50g Coco powder

120g Gluten free flour

28g Almond meal

35 g Pecans

60g Vegan chocolate buttons

Start by preheating the oven to 180 degrees and line your baking tray with grease proof paper.

Then make the flax eggs and leave to one side.

Grab a large mixing bowl and add the melted butter/coconut oil, maple syrup, coconut sugar and vanilla extract. Whisk all the ingredients together until the coconut sugar begins to dissolve.

Once it is all combined and the sugar has began dissolving, whisk in the flax eggs. Then add the baking powder, sea salt and coco powder and whisk together.

Now add the gluten free flour, almond meal and fold until mixed.

Finally adding the pecans and chocolate buttons (saving a few to put on top!).

Then empty the mixing bowl out on to the grease proof lined baking tray, smoothing it out in to an even layer. Now this is when you can add the extra chocolate buttons and pecans you saved earlier.

Put in the oven for 18-22 minutes. Until the centre is no longer wet or sticky.

When it looks ready, take it out of the oven, I know this is hard but let them cool.

Leave for at least 10 minutes and then you can tuck in.

Look at this deliciousness!!!

If you don’t eat them all at once (it may be tempting) just place the left overs in a air tight container, which you can freeze or keep in the fridge. Ready to be heated up when you feel like you need that yummy brownie fix.
