I love cooking, I find it therapeutic and a lot of fun when experimenting with flavours. However on a week night when I am rushed for time I will always go for something quick. No one has time to make a cauliflower pizza base on a week night, right?
I want my dinner to be healthy and nourishing but the preparation to be minimal.
This colourful quinoa bowl is all those things and more!
It is my favourite simple dinner at the moment, it’s full of flavour, super easy to put together and will leave you with a very happy tummy. The whole meal takes about 30 mins to make from start to finish and is a one pot dish, so there is barely any washing up! The perfect after work dinner.
The flavours go together so well and each bite feels hearty and delicious. It is also packed with lots of goodness so it will leave you feeling amazing from the inside out!
You will need:
2 bell peppers
1 cup quinoa
1 cup of vegetable stock (I used bouillon)
2 cloves of garlic
1 can of black beans
1 can of chopped tomatoes
1 can of sweetcorn
1 tsp chili powder
1/2 tsp cumin
Handful of chopped coriander
Firstly chop the peppers into bite size pieces and finely chop the jalapeño.
Then heat up the olive oil in a large sauce pan on a medium to high heat. Add the peppers, jalapeño, crushed garlic, salt and pepper and cook until the pepper softens.
Now stir in the quinoa, stock, black beans, tinned tomatoes, sweet corn and spices.
Cover and simmer until the quinoa is cooked through.
This should take around 30 minutes.
When the quinoa is cooked and the pan is smelling delicious, it is ready…
It really is that easy!
Serve in bowls topped with the avocado, coriander and a splash of lime juice.
