Bircher Breakfast

This is a delicious, healthy breakfast that can be prepared the night before so there is no fuss in the morning!

When time is not on my side I make this super quick bircher the night before. It takes less than five minutes to throw together in the evening and then you can just grab it and go in the morning.

Plus it is incredibly yummy.

Serves two :

You will need –

1 cup of rolled oats

1 cup oat milk

1 teaspoon cinnamon powder

2 tablespoon sultanas

1 date finely chopped

3/4 tablespoon peanut butter

1 tablespoon chia seeds

The night before put your oats, oat milk, cinnamon, sultanas, chopped date and chia seeds in an air tight container and give it a good mix.

Seal it up and keep in the fridge to allow it to thicken overnight. Leaving your oats to soak mean they are a lot easier to digest and also become deliciously creamy.

This recipe is ideal for two portions but if you wanted to make more, the oats will last a good few days in the fridge.

Then when you wake up all you need to do is grab a bowl, serve your portion, and put on any toppings that you like. (It really is as simple as that!)

I love topping my bowl with a mixture of berries and fruit. It is also an amazing way of getting more nuts and seeds into your diet.

Chia seeds have amazing nutritional value and I read that they were the food of choice for Aztec and Mayan warriors. A single tablespoon would keep them going for 24 hours! I put them in nearly all my breakfasts as they are high in protein.

You can also now get chia in Tescos for £1!!!!

Bircher is the easiest and simplest breakfast ever. It means you no longer have an excuse to reach for the shop-bought, sugar filled cereals next time you are in a rush in the mornings.

 

Go ahead and try it yourself, it is creamy and delicious, yet so health enhancing! It will make you feel glowing, energised and ready for the day ahead!

My inspiration for this bircher came from Madeleine Shaw’s ‘Get the Glow’ recipe book. I have tried a few things from here and I would highly recommend it if you are looking for quick and healthy meals.
